
We are back at the Magic Kingdom this week featuring a recipe from the Liberty Tree Tavern. This week’s recipe is the Ooey Gooey Toffee Cake! As you will see watching the video, I was unsure what to bake this in. I think if I make it again, I will use a baking pan. I the size of the ramekins I used were fine, but the depth of them could have been deeper. Either way, they came out pretty good to me, although my son, Alex, was not too fond of them. But, if you knew Alex, that wouldn’t surprise you in the least. Now, let’s get to the recipe!

Ooey Gooey Toffee Cake
Ingredients
Cake Bottom
- 1 box yellow cake mix
- 1 large egg
- 1 stick butter
Cake Top
- 8 ounces cream cheese (softened)
- 2 large eggs
- 1 tsp vanilla
- 1/4 cup butter
- 1 lb powdered sugar (sifted)
- 1 cup semi sweet chocolate chips
- 1 cup Heath bar pieces
Instructions
Cake Bottom
- Mix Ingredients.
- Spread mixture evenly in greased baking pan.
Cake Top
- Preheat oven to 325 degrees.
- Mix cream cheese until smooth.
- Slowly add eggs and vanilla.
- Add butter and mix well.
- Add powdered sugar, slowly.
- Add chocolate chips and toffee pieces.
- Mix until ingredients are all just incorporated evenly – do not overmix!
- Put on top of Cake bottom ingredients in pan. (Usually a large muffin pan can work well for this. )
- Bake for 35 minutes. Inside should be slightly gooey, but not liquid.
Notes
I made these last Monday before I started work. I thought I would be awake enough to handle it! (Hehe.) I am not so sure I was; but, for the next few weeks, this will be my filming schedule. It’s the quietest time of the day and I don’t have to worry about keeping an eye on Michael.
I must admit, these were so sweet! Maybe even too sweet for me. I am not a huge toffee fan, so, maybe if that was eliminated, I would have enjoyed it more. Alex just happened to come into the kitchen while I was filming, and he shares his opinion very well on my YouTube video. Be sure to check it out as he gives his honest opinion.
