I was hoping to start this out by saying, “I loved the movie Rapunzel!” Guess what? I haven’t seen the entire movie … yet. I hear you; I know you’re asking, ‘What kind of Disney fan are you, Joann?’ I’m a running behind kind of Disney fan. Believe me, there was a time that I stayed on top of every movie release Disney put out. Along the way, a few complicated things, such as life responsibilities, have been getting in the way. It’s okay though; I’m more than happy to catch up!
This week’s recipe comes from the Disney Princess Cookbook and it’s Pascal’s Pancakes. I do know who Pascal is, so that’s a start, right?! I was intrigued by these pancakes because of one ingredient I’d never tried adding to the batter – maple syrup. Let’s get to the recipe and then I’ll share with you if I was a fan or not.

Pascal’s Pancakes
Ingredients
- 1 egg
- 3/4 cup milk
- 2 tbsp oil
- 1 tbsp maple syrup
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- Pam spray or butter
Instructions
- Crack the egg into a large mixing bowl.
- Whisk in milk, oil, and maple syrup.
- In another bowl, whisk together the flour, baking powder, and salt.
- Add to egg mixture. Stir just until combined. It will be lumpy!
- Lightly grease a griddle or frying pan warmed to medium heat.
- Pour batter on using a 1/4 cup measuring cup.
- Cook until the tops start to bubble. Flip and continue cooking until golden brown.
Notes
I enjoyed this recipe so much; I’m going to purchase this cookbook as well! The pancakes were light and fluffy, very flavorful. I’m guessing the maple syrup does give it a little extra-delicious flavor! I suggest making this with your kids; it’s easy to do and they will enjoy being able to help in the kitchen!
